INGREDIENTS for 4 persons
6 potatoes Atlas
3 eggs
1 onion
2 teaspoon of coriander
2 teaspoon of parsley
1 teaspoon of cumin
1 teaspoon of paprika
Flour
Breadcrumbs
Olive oil
Salt
PREPARATION
Peel the potatoes and plunge them in a large volume of cold water, cook for 20 minutes.
Use a fork to reduce the potatoes in mash and set aside.
Slice the onion and brown it in olive oil then mix with the mashed potatoes. Add the spices and sliced herbs. Salt.
Add two eggs and mix until obtaining a dough, divide into several rolls, then spread them to obtain pancakes.
Dip them in the beaten egg, then in flour and breadcrumbs.
Fry them in a pan till golden.
Serve with a green salad.
